Tonight’s dinner was brought together by the various items that Sprouts had on sale. First, I noticed that sprouts were 4 pounds for $5. Try, if you can, to envision what four POUNDS of sprouts would look like…I’d wager something like four pounds of feathers. I bagged a very, very generous helping of sprouts and it only came to about 42 cents! Anyways, once I got the sprouts, I started mentally cataloging what I could possibly do with them…and then I noticed that whole mushrooms were on sale! And peppers! And canned baby corn! All of a sudden: stir fry.
Now, I’ve made stir fry before…but never wholly from scratch as I was about to attempt. I guess I’m afraid of burning everything and then having nothing but canned tuna for dinner. But, this time I had a goal: I would make stir fry, and it would be yummy. Like Mongolian places that let you cram as much raw food into a bowl as you humanly can…but without the inflated price.
I think it turned out quite well – I sauteed red & green peppers, water chestnuts, onion, garlic, baby corn, mushrooms, sprouts, and squash, and then added a soy sauce mixture (1/2 cup water + 3 tbsp soy sauce) to give flavor and let everything cook all the way through. I also added rosemary, basil & some salt. Paired all that with some healthy brown rice, and voila! Dinner is served 🙂
